Chili
- 3 tablespoons cold pressed olive oil
- 1 large onion or 3 cloves garlic, chopped
- 4 cloves garlic, finely chopped
- 1 green pepper, chopped
- 15 oz. can diced tomatoes
- 15 oz. can tomato puree
- 15 oz. can garbanzo beans, drained
- 15 oz. can kidney beans, drained
- 1 cup water
- 1 teaspoon basil
- 1/2 teaspoon black pepper
- 6 teaspoons chili powder
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1/2 teaspoon sea salt
Instructions:
Heat oil in an 8-quart pot at medium heat. Saute onions, garlic, and peppers until brown.
- Add remaining ingredients.
- Cover and simmer for 60 minutes.
- Add more water if sauce is too thick.
