Chilled Summer Salad
Instructions:
- 2 medium zucchini, cut in half lengthwise and thinly sliced
- 1 pint cherry tomatoes, quartered
- 1 medium green bell pepper, chopped
- 1 medium onion, chopped
- 1/2 pound sharp white Cheddar cheese, diced
- 1/4 cup mayonnaise
- 2 tablespoons cider vinegar
- 2 tablespoons sugar
- 1 tablespoon fresh dillweed (1 teaspoon dried)
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large bowl, combine the zucchini, tomatoes, green pepper, onion, and cheese; mix well.
- In a small bowl, combine the remaining ingredients; mix well.
- Add the mayonnaise mixture to the tomato mixture and toss until well coated.
- Cover and chill for at least 2 hours, or until ready to serve.
