CHINESE PEPPER STEAK
Instructions:
- 2 lbs round steak, cut into thin strips 2 in long
- 4 tbs olive oil
- 2 clove garlic, minced
- 2 tsp salt
- 2 cups beef broth
- 2 green peppers, sliced into thin strips
- 2 cups celery, thinly sliced
- 2 onions, thinly sliced
- 1 can Coca-Cola-
- 3 tomatoes, cut into 8 wedges each
- 1/2 can Coca-Cola
- 4 tbs cornstarch
- 2 tbs teriyaki sauce
- 8 servings rice cooked to package directions
- Heat oil in Dutch oven and brown meat and garlic.
- Add beef broth, over and simmer 15 minutes.
- Stir in green pepper, celery, onions, and Coke.
- Cover and simmer for 5 minutes. Do not over cook veggies.
- Gently stir tomatoes into mixture.
- Blend cornstarch into 1/2 cups Coke and teriyaki sauce.
- Stir into meat mixture until sauce is thickened.
- Serve over hot rice.
