Chipotle Skirt Steak with Avocado Salsa
Instructions:
- Serve this Southwestern winner at your next barbecue.
- 1 tablespoon chipotle chile powder
- 3â„4 teaspoon salt
- 11â„4 pounds beef skirt steak
- 2 plum tomatoes, coarsely chopped
- 1 ripe medium avocado, pitted and peeled, cut into 1â„2-inch pieces
- 1â„2 cup salsa verde or mild salsa
- Prepare outdoor grill for direct grilling over medium heat. In cup, with fork, stir chipotle chile powder and salt. Use to rub on steak.
- Prepare salsa: In medium bowl, stir tomatoes, avocado, and salsa. (Makes 2 cups.)
- Place steak on grill over medium heat. Cook steak, turning once, 6 to 8 minutes for medium-rare or until desired doneness. Transfer steak to cutting board and let stand 5 minutes to set juices for easier slicing. Cut against the grain into thin slices. Serve with avocado salsa. Makes 4 main-dish servings.
