Chocolate Fettucini with Orange Sauce
Instructions:
- 1 cup durum wheat semolina
- 3/4 cup all-purpose flour
- 1 tbsp instant chocolate milk powder
- 1 tsp. cocoa
- pinch salt
- 1 egg, lightly beaten
- 1 tsp. vegetable oil
- Orange Butter Sauce:
- 1 large orange
- 1/3 lb. unsalted butter
- Sift dry ingredients together.
- Gradually mix in egg and oil, adding water if necessary to form a dry but well-mixed dough.
- Knead dough on lightly floured board for 6 minutes until it has a smooth and elastic texture. Let stand 15 minutes.
- Divide dough in two. Roll each piece into thin rectangular sheet.
- Let sit for a few minutes before cutting.
- Cut sheets into fettucini width strips with pasta machine or roll up each sheet and slice of ribbons with sharp knife.
- Can be prepared well in advance.
- Keep moist if not using immediately.
- Cook pasta in boiling water.
- Orange Butter Sauce
- Cut rind into quarters. Peel rind from one quarter.
- Remove inner pith. Slice rind paper–thin.
- Grate zest off rest of orange.
- In small saucepan heat butter until it browns slightly.
- Add orange rind and zest.
- Heat gently for 2 to 3 minutes until rind gives off aroma.
- Drain cooked pasta. Pour sauce over it and toss lightly.
- Serve immediately with whipped cream or mascarpone (Italian cream cheese).
