Chocolate-Orange Pudding

- 6 tablespoons coconut milk
- 1⁄2 cup agave nectar
- 1⁄2 teaspoon orange extract
- 1⁄2 cup unsweetened cocoa powder
- 1⁄8 teaspoon fine sea salt
- 2 boxes (3⁄4 pound) Mori-Nu firm silken tofu (this dessert only works with this brand because of its particular texture)
Instructions:
Chocolate-Orange Pudding makes a delicious dessert.
- In a medium-size saucepan, combine the coconut milk, agave nectar, orange extract, cocoa powder, and salt and whisk to incorporate the cocoa powder. Bring to a boil over high heat and then immediately reduce the heat to low and simmer for 1 minute, whisking constantly. Remove from the heat.
- Pour the mixture into in a blender, add the tofu, and blend until smooth. Transfer to a medium bowl.
- Cover with plastic and refrigerate for 1 hour to cool down.
