Chocolate Tart
Instructions:
- This recipe is all about assembling other recipes to make a
killer, super-chocolaty tart. When they’re in season, use
fresh raspberries to garnish the top—and hide imperfections;
other times of the year you can decorate with chocolate
shavings . Top with Whipped Cream
flavored with vanilla, chocolate, or mint .
- 1 recipe Chocolate Tart Crust
, prebaked and cooled - 1 recipe Vanilla Pastry Cream
flavored with chocolate, chilled - 1/2 recipe Chocolate Glaze
- Fill the tart with the pastry cream to 1/4 inch from the top of the edge; smooth the surface as much as you can.
- Put it in the freezer until the surface of the cream chills and stiffens a bit.
- Use an oiled spatula to spread the glaze over the surface of the whole tart. Chill until set. Serve chilled or room temperature.
- Chocolate-Caramel Tart.
- Always a hit: Add a layer of Creamy Caramel Sauce and let it cool and set up a bit before adding the pastry cream and proceeding with the recipe.
