Chocolate truffles
Instructions:
- Chop the chocolate into small pieces and place in a large bowl. Pour the cream into a saucepan, then bring to a boil.
- Pour the hot cream over the chocolate.
- Leave the chocolate to melt for 3 minutes, then stir well with a balloon whisk, until smooth and creamy.
- Whisk in the butter.
- Pour in the brandy and stir until smooth.
- Cover the surface of the mixture with plastic wrap to prevent a skin from forming, then set aside to cool until firm.
- Use two teaspoons to shape the mix into walnut-size, irregular-shape pieces.
- Drop the truffles into the cocoa powder.
- Carefully roll them to coat.
- Serve the truffles at room temperature.
