Christmas Barley Porridge
Instructions:
This is a traditional Christmas morning dish.
2 cups coarse barley, washed and
drained
salt to taste
5 cups boiling water
1⁄2 cup butter
- Put barley in a pot with salt.
- Pour boiling water over it; simmer until thickened, and most of the water has been absorbed. Stir in half of the butter.
- Transfer to a buttered 8 x 8-inch baking dish. Spread remaining butter on top.
- Bake in preheated 350 F oven for 25–30 minutes, or until all water is absorbed, and the top is golden brown.
- Season with more butter if desired.
