Cinnamon Doughnuts
Instructions:
- 2 large eggs
- 1/ 2 c. plus 3 tbsp. sugar
- pinch salt
- 1 c. all-purpose flour
- 1/ 2 c. cornstarch
- 2 tsp. baking powder
- 1/ 2 c. milk, warmed slightly to room temperature
- vegetable shortening for deep frying
- 3 tbsp. cinnamon
- In a large mixing bowl, combine eggs, 1/ 2 c. sugar, and salt. Mix well. While stirring, slowly add flour, cornstarch, baking powder, and milk.
- Pour 2 to 3 inches of oil into a deep skillet or stockpot. Heat to 350 F, or until a drop of water flicked into the pan jumps out.
- Carefully drop several spoonfuls of batter into the oil. Each piece of batter will make a bite-sized doughnut. Fry 3 to 4 minutes, or until evenly browned on all sides. Use a slotted spoon to remove doughnuts from oil and drain on paper towels.
- Combine cinnamon and remaining 3 tbsp. sugar in a small bowl. When cool enough to handle, roll each doughnut in cinnamon-sugar mixture to coat and serve warm.
