Citrus Chicken Salad
Instructions:
- 1 medium−size head Boston Lettuce
- 1 can (11 oz.) mandarin oranges, undrained
- 1/4 cup sour cream
- 2 tablespoons mayonaise
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon chili powder
- 1 tablespoon fresh lime juice
- 3 oz. Cheddar cheese, cut in small cubes
- 1/3 cup crumbled cooked bacon
- 1/3 cup diced red onion
- 1/2 pound cooked chicken, cut in strips
- Rinse lettuce leaves and pat dry with paper towling.
- Tear into large salad bowl.
- Drain oranges through sieve over a bowl: reserve 2 tablespoons liquid.
- Whisk together sour cream, mayonaise, salt, black pepper, chili powder, lime juice, and reserved orange juice in a small bowl.
- Add mandarin oranges, cheese, bacon, and onion to salad bowl.
- Add sour cream mixture; toss to coat.
- Top with chicken and serve immediately.
