Classic French Vinaigrette
Instructions:
Dijon mustard gives this vinaigrette smoothness and just the right amount of zing. 1â„4 cup red wine vinegar 1 tablespoon Dijon mustard 3â„4 teaspoon salt 1â„2 teaspoon coarsely ground black pepper 1â„2 cup olive oil
Makes about 3â„4 cup. Prep: 5 minutes.
- In medium bowl, with wire whisk, mix vinegar, mustard, salt, and pepper until blended. In thin, steady stream, whisk in oil until blended. Cover and refrigerate up to 1 week.
