Classic Mayonnaise
Instructions:
1 cup mixed oil (olive oil and peanut or canola oil), 1 large egg yolk, 1/2 tsp. salt, 2 tsp. dijon mustard, 4 tsp. lemon juice, or white wine vinegar or tarragon vinegar, white or black pepper.
Place yolk, mustard and salt in large bowl. Whisk 1 minute. Add half the oil very slowly, a little at a time, beating constantly. When mixture begins to thicken, add lemon juice a bit at a time. Add remaining oil in a thin stream, beating constantly. Add pepper to taste. Makes 1 cups. Enjoy Classic Mayonnaise!
