Classic Potato, Onion and Ham Pizza

3 tablespoons butter or olive oil, divided 3 cups potatoes, sliced ¼ inch thick 2 sweet onions, sliced ¼ inchthick 1 tablespoon coarsely chopped garlic ½ teaspoon salt ½ teaspoon pepper 1 (16-ounce) prebaked pizza crust 2 cups (8 ounces) shredded mozzarella cheese 8 thin slices (4 ounces) deli ham 8 slices provolone cheese ½ cup (about 2 ounces) grated Parmesan cheese ¼ cup chopped fresh parsley
Instructions:
This one will surely become your new favorite pizza.
- Preheat the oven to 400°F.
- In a large skillet, heat 2 tablespoons of the butter or oil; add the potatoes, onions, garlic, salt, and pepper. Cook over medium heat for 12 to 15 minutes, turning occasionally. Stir in the remaining butter and cook until the potatoes are golden brown, 5 to 7 minutes.
- Place the pizza crust on a pizza pan or a large baking sheet. On the crust, sprinkle the mozzarella; top with the ham slices. Place the potato mixture over the ham; top with the provolone slices. Sprinkle with the Parmesan and parsley. Bake directly on the oven rack for 15 to 20 minutes, or until the cheese is melted.
