Coco Loco Cookies
Instructions:
- When I discovered the chocolate–coconut combination, I tried to think of as many possible ways to put them together as I could. This simple cookie is a double treat because it combines both cocoa powder and chocolate chips with chewy, nutty coconut. I use finely shredded coconut.
- Preheat the oven to 350 degrees and grease a baking sheet.
- Combine the butter, honey, vanilla, and cocoa powder and beat until creamy. Whisk together the flour and baking soda, then stir the flour mixture into the dough. Stir in the coconut and chocolate chips.
- Scoop up large spoonfuls of the dough, roll them into balls, and place them on the prepared baking pan. Bake for about 10 minutes.
