Coconut macaroons
Instructions:
- Preheat the oven to 350°F and line a large baking sheet with parchment paper. Mix the coconut and sugar in a large bowl.
- Beat the egg with a balloon whisk.
- Stir the egg into the coconut and sugar.
- Mix with your hands until even.
- Using your hands or two teaspoons, shape the mixture into walnut-size balls.
- Place on the baking sheet.
- Bake for 13 minutes, or until slightly golden.
- Let cool before serving. Makes 2 servings
