Coffee Cake Bolo de Cafe
Instructions:
2 sticks of butter, softened,2 c. brown sugar, 4 eggs, separated, 2 c. all-purpose flour , 1 c. rice flour* , 1 c. strong coffee, or 1/2 c. instant coffee powder mixed with 1 c. water, 1 tsp. baking powder , 1 tsp. instant coffee powder, 1 tsp. cocoa powder .
1. Preheat oven to 350˚F. Lightly grease a 913-inch baking pan. 2. In a large mixing bowl, combine butter and sugar and blend thoroughly. 3. Add egg yolks and beat well. 4. Add all-purpose flour, rice flour, coffee, and baking powder. Mix well. 5. In a small mixing bowl, beat egg whites until stiff. Fold into cake batter. 6. Pour batter into baking pan and bake 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Sprinkle with coffee and cocoa powders and cut into squares to serve. *Look for rice flour at Asian or Latin Serves 12 American markets. If you have trouble finding rice flour, you can substitute an equal amount of cornstarch for this ingredient.
