Coriander Mustard Seed Rub

- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon green cardamom pods
- 1 teaspoon nutmeg
Instructions:
The flavor and aroma of coriander has a hint of lemon that blends in well with the stronger flavors and powerful aromatics of spices like cardamom and cumin.
- In a skillet over medium heat, toast coriander, cumin, mustard, and cardamom for about 3 minutes. The spices will become more fragrant and slightly darker as they toast and some of the seeds might make popping noises.
- Cool, then finely grind with remaining ingredients in a coffee grinder or with a mortar and pestle.
