Corn pones
Instructions:
- 1/2 cup boiling water
- 1 cup white cornmeal
- 2 tablespoons shortening
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cream
- Pour boiling water over cornmeal and chill mixture for about an hour.
- After mixture is well chilled start your oven [at 400 degrees] (moderately hot).
- Put 1 tablespoon shortening in a heavy skillet (one you can put in the oven) and heat skillet until the fat melts.
- Now pour remaining tablespoon of shortening (melted) into cornmeal along with baking powder, salt, and cream.
- Mix well and drop by tablespoonfuls into the hot skillet.
- Flatten with the back of a spoon and bake 20 to 30 minutes or until nicely browned.
- Makes 8 to 10 pones.
