CREAMED PEAS
Instructions:
- 2 c. shelled green peas
- 2 Tb. butter
- 2 Tb. flour
- 1/2 tsp. salt
- Dash of pepper
- 1/2 c. water from peas
- 1/2 c. milk
- Cook the peas in boiling salted water until tender, and then drain the water from them, retaining 1/2 cupful for the sauce.
- Melt the butter, add the flour, salt, and pepper, and stir in the hot liquids.
- Cook until the flour has thickened and then pour over the peas.
- Serve hot, either plain or in croustades.
- Sufficient to Serve Six
