Creamy Corn Chowder

- 2½ cups plain, unsweetened almond milk, chilled
- 2½ cups fresh or frozen organic corn kernels (thawed), plus
- more for optional garnish
- 1 small shallot
- 1 ripe avocado, plus more for optional garnish
- Scallions or fresh cilantro, optional
Instructions:
You can serve this soup cold like a gazpacho.
- Puree all ingredients in a blender until smooth. Ladle into bowls and sprinkle with scallions, diced avocado, and corn kernels.
