Creamy slaw with boiled dressing
Instructions:
- Whisk together the Boiled Dressing, salt, pepper, celery seed, sugar, and vinegar in a large bowl. Taste the mixture to make sure it has the right balance of sugar and vinegar, leaning toward the sweet side. Let sit for 10 minutes to give the sugar time to dissolve.
- Add the cabbage, carrot, and onion and stir well. It will seem dry at first, but keep stirring until the cabbage releases some of its own moisture. Check for salt and serve soon, or cover and refrigerate until ready to serve. Stir well before serving.
- Variation: You can replace the Boiled Dressing with mayonnaise. To combat watery slaw when using mayonnaise, toss the cabbage with 1 tablespoon of salt in a colander and let sit at room temperature for 1 hour, pressing out the moisture with your hands every 20 minutes. The slaw will probably not need additional salt.
