Cucumber and Mint

- 9 small Persian cucumbers
- 2 tablespoons olive oil
- ½ cup fresh mint, finely chopped
- sea salt to taste
Instructions:
Cooking cucumbers, rather than eating them raw, subtly changes the flavor without losing the crisp, refreshing qualities that make cucumbers so popular.
- Preheat broiler to low heat.
- Cut cucumbers in half lengthwise, then in half again.
- Drizzle cucumbers with olive oil and put under the broiler for five minutes. The cucumbers will soften but still have some crispness.
- Remove from oven and sprinkle with mint. Add sea salt to taste.
