Curried lentil soup
Instructions:
- Heat a soup pot and add soy oil. Chop up onions, yams, parsnips and carrots, then sauté - covered - on medium low heat for about five minutes.
- Combine the lentils, salt, and curry powder with the sautéing mixture.
- Continue cooking - covered - for five more minutes, stirring occasionally.
- Pour in vegetable stock, bay leaves and bring to a boil.
- Turn down heat and simmer - approximately 30 minutes - until lentils are done
