While bananas will never be a seasonal treat in this part of the
world, they are a reliable kid pleaser as well as a solid package of
nutrients and energy.
Preheat the oven to 375 degrees and grease two loaf pans
or a 9×13-inch baking pan. In one bowl, mix together the
bananas, jam or syrup, vanilla, and nuts (if using). In another
bowl, blend the flour, baking powder, and salt.
Add the flour
mixture to the banana mixture and blend well. Slowly stir in
the juice. Pour the batter into the prepared pan(s) and bake
for 25 to 30 minutes.
