Delicious Banana Bread
Instructions:
- What else are you going to do with over-ripened bananas? While bananas will never be a seasonal treat in this part of the world, they are a reliable kid pleaser as well as a solid package of nutrients and energy.
- Preheat the oven to 375 degrees and grease two loaf pans or a 9×13-inch baking pan. In one bowl, mix together the bananas, jam or syrup, vanilla, and nuts (if using). In another bowl, blend the flour, baking powder, and salt.
- Add the flour mixture to the banana mixture and blend well. Slowly stir in the juice. Pour the batter into the prepared pan(s) and bake for 25 to 30 minutes.
