Everyone loves zucchini breadâ€”especially the baker. It delivers lots of flavor with very little effort.
11â„2 cups all-purpose flour 3â„4 cup sugar 21â„4 teaspoons baking powder 1â„2 teaspoon ground cinnamon 1â„2 teaspoon salt 1â„3 cup vegetable oil 2 large eggs 11â„2 cups shredded zucchini (1 medium) 1â„2 cup walnuts (2 ounces), chopped 1â„2 teaspoon freshly grated orange peel Makes 1 loaf, 12 slices. Prep: 20 minutes Bake: 1 hour 10 minutes
- Preheat oven to 350Â°F. Grease 81â„2" by 41â„2" metal loaf pan.
- In large bowl, with wire whisk, stir flour, sugar, baking powder, cinnamon, and salt. In medium bowl, with fork, mix oil, eggs, zucchini, walnuts, and orange peel. Stir zucchini mixture into flour mixture just until flour is moistened.
- Pour batter into prepared pan. Bake until toothpick inserted in center comes out clean, about 1 hour 10 minutes. Cool in pan on wire rack 10 minutes; remove from pan and cool completely on wire rack.
