Deluxe Cheese Pie

This is like a scrumptious classic cheesecake, but it’s made in a fraction of the time. Graham Cracker–Crumb Crust
11â„2 packages (8 ounces each) cream cheese, softened 1â„2 cup plus 2 tablespoons sugar 2 large eggs 1â„2 teaspoon vanilla extract 1 container (8 ounces) sour cream
Makes 10 servings. Prep: 20 minutes plus cooling and chilling Bake: 45 minutes
- Preheat oven to 350°F. Prepare crust as directed. Cool on wire rack.
- In medium bowl, with mixer at low speed, beat cream cheese and 1â„2 cup sugar until smooth, occasionally scraping side of bowl with rubber spatula. Add eggs and vanilla; beat just until combined.
- Pour cheese filling into cooled crust. Bake until set, about 30 minutes.
- Blend sour cream and remaining 2 tablespoons sugar. Spread evenly over hot pie. Bake until set, about 5 minutes. Cool pie on wire rack. Refrigerate at least 2 hours for easier slicing or up to overnight.
