Denver fudge pudding
Instructions:

This has a cakelike top and a fudgy pudding on the bottom. It is best served the day it is made, while the top is still moist.
- 11⁄4 cups granulated sugar;
- 1 cup all-purpose flour;
- 2 teaspoons baking powder;
- A dash of salt;
- 7 tablespoons dark unsweetened cocoa;
- 1⁄4 cup butter;
- 1⁄2 cup milk;
- 1 teaspoon vanilla;
- 1⁄2 cup brown sugar;
- 11⁄2 cups cold water or cold coffee;
- Whipped cream or ice cream (optional).
- Preheat oven to 350 F. Butter a 9-by-9-inch baking dish.
- In a bowl, combine 3⁄4 cup granulated sugar, the flour, baking powder, salt, and 3 tablespoons cocoa. Melt the butter and add it along with the milk and vanilla to the dry ingredients. Mix until just blended. Pour into the prepared baking dish.
- Scatter over the top of the pudding, without first mixing, the brown sugar, 1⁄2 cup granulated sugar, and 4 tablespoons cocoa. Pour the cold water or coffee over the pudding. Bake 40 minutes. Let stand at room temperature until cool but not chilled. Serve with or without whipped cream or ice cream.
