Duck gumbo
Instructions:
- The use of duck has once again come into fashion, and duck is almost as easy to Wnd as chicken at your local specialty shop.
- 1/4 cup cooking oil or shortening
- 1/4 cup flour
- 1 cup dry onion, chopped
- 4 large ducks or 10 to 12 quail or 10 to 12 doves
- Black and red pepper
- 1 1/2 cups chopped bell peppers
- 1 1/2 cups chopped celery
- 1 cup cooking parsley
- 1 cup green onion, chopped
- Make a roux (by heating the oil and adding the flour).
- Stir constantly until very brown.
- Add onion and cook till wilted.
- Then add meat, seasoning, peppers, and celery.
- Cover tightly and let simmer until cooked down (about an hour).
- Then add 1 1/2 quarts of water, parsley, and green onion and cook till meat is tender (falls off the bone).
- May add more water as needed.
- Serve over rice. Serves 10
