Dumplins
Instructions:
There is no spelling mistake here: dumplins are spelled without a ‘‘g’’ in Antigua
and most of the Caribbean. Dumplins are a traditional accompaniment to
soup as well as the main dish. Dumplins when fried are called ‘‘bakes.’’
1 cup flour
1⁄2 tsp salt
2 tsp baking powder
1⁄4 cup butter
1⁄4 cup ice water
- Blend flour, salt, and baking powder. Rub in butter until it resembles coarse meal.
- Sprinkle with water to make a dough. Knead until soft and smooth.
- Shape into balls, flatten, and drop into boiling salted water. Let boil for 5–10 minutes.
- Boiling for 20 minutes results in a waxy dumplin, which some Antiguans prefer.
