Dutch Apple Cake
Instructions:
The Dutch are well known for their apple cake, which is
popular in America as well.
vegetable oil cooking spray
2 medium apples
11⁄2 cups all-purpose flour
1 tablespoon baking powder
1⁄4 teaspoon salt
1⁄4 cup sugar
1⁄4 cup margarine
1 egg
3⁄4 cup low-fat or nonfat milk
2 tablespoons sugar
1⁄2 teaspoon ground cinnamon

- Preheat the oven to 400 F.
- Spray an 8x 8-inch baking pan with vegetable oil cooking spray.
- Wash the apples and pat dry with paper towels.
- Peel the apples. Using a cutting board, cut the apples in half and remove the seeds. Cut each apple half into 4 wedges.
- In a large bowl, stir together the flour, baking powder, salt, and 1⁄4 cup of sugar with a wooden spoon.
- Cut the margarine into the flour mixture with the pastry blender, using a back-and-forth motion until the mixture looks like small peas.
- Break the egg into a small bowl and beat with a fork. Add the milk and mix.
- Add the egg and milk mixture to the flour mixture. Stir well.
- Pour the batter into the baking pan.
- Press the apple wedges partly into the batter.
- In a small bowl, combine 2 tablespoons of sugar and cinnamon. Sprinkle over the apples.
- Use oven mitts to put pan in oven. Bake for 25 to 30 minutes until golden brown. Remove from oven with oven mitts.
