Dutch apple pancakes
Instructions:
-
Billowy, puffy baked pancakes make a wonderful dessert for brunch or supper. Serve a light first course, such as a vegetable soup or salad.
- 6 tablespoons butter;
- 1 cup all-purpose flour;
- 1 cup milk;
- 5 eggs;
- 1 tablespoon granulated sugar;
- 1⁄2 teaspoon salt;
- 3 Granny Smith or Golden Delicious apples, pared, cored, and sliced;
- Powdered sugar.
- Preheat oven to 425 F.
- Place a heavy 12-inch skillet over medium heat and add 4 tablespoons butter. In a bowl, combine the flour, milk, eggs, granulated sugar, and salt. Pour into the heated skillet and place in the preheated oven. Bake 20 to 25 minutes, or until puffed and browned.
- While the pancake bakes, add remaining 2 tablespoons butter to a frying pan. Add the apples and saute over medium heat for 15 to 20 minutes, until tender. Sprinkle pancake with powdered sugar and serve topped with the sauteed apples.
