Instructions:
Eclairs are simply cream puff paste shaped into long, narrow strips and baked. They are usually frosted with a chocolate icing.
- 1 recipe cream puff paste;
- 1 cup heavy cream, whipped, or Vanilla Pilling

- 6 ounces chocolate chips.
- Preheat oven to 400 F.
- Prepare cream puff paste as directed. Fit a pastry bag with a 1⁄2 or 1-inch-diameter tip and fill bag with the paste.
- On a greased cookie sheet, press dough out to make l-by-4-inch strips. Bake 35 to 45 minutes, or until golden. Split while hot to let steam escape.
- Just before serving, fill with whipped cream or Vanilla Pilling
;. Place chocolate chips in a metal bowl over a pan of hot water. Stir until completely melted.
Frost eclairs with glaze. MAKES 6 SERVINGS
