Eggles egg salad
Instructions:
- In a mixing bowl, drain and crumble tofu with your hands. Heat vegetable stock in a small sauce pan and add the crumbled tofu.
- Boil tofu for 3-5 minutes to alter the texture to a more egg-like product.
- Allow to cool, drain off excess liquid then add remaining ingredients and mix gently but thoroughly.
- Chill before using.
