Eye of round roast
Instructions:
- This was often part of our Sunday dinner fare, and I still love it to this
day. The recipe in and of itself is as simple as it can be, but the
resulting flavor of the meat is out of this world. I suggest using an
electric knife to cut thin slices and serving alongside MeMe’s Mashed
Potatoes.
- Cracked or coarsely ground pepper
- Eye of round roast
- Preheat the oven to 500 F.
- Generously pepper the roast. Place in a pan lined with aluminum foil or sprayed with cooking spray. Place the roast in the oven and bake for 5 minutes per pound plus 10 minutes.
- Turn off the oven—DO NOT OPEN THE OVEN for 2 hours. If it is a long eye of round, cut in half and place side by side in a pan, leaving a little space between the halves.
- 6 to 8 servings
