Fennel Crusted Bluefish
Instructions:
If you prefer to grill, rub the bluefish with olive oil, then with the fennel mixture. Serve with lemon wedges. 2 teaspoons fennel seeds, crushed 1â„2 teaspoon whole black peppercorns, crushed 1â„2 teaspoon salt 4 pieces bluefish fillet (6 ounces each) 1 tablespoon butter or margarine 1 teaspoon olive oil
Makes 4 main-dish servings. Prep: 5 minutes Cook: 8 minutes
- In cup, combine fennel seeds, peppercorns, and salt. Use to rub on both sides of bluefish fillets.
- In nonstick 12-inch skillet, melt butter with oil over medium-high heat. Add bluefish and cook until fish is just opaque throughout, 4 to 6 minutes per side.
