Festive Party Salad
Instructions:
- 4 cups (1 pound) Dole* Fresh Frozen Mixed Fruit, partially thawed
- 12 cups (1 pound) lightly packed Dole* Chopped Hearts of Romaine
- Salad Blend
- 2 cups chopped fresh Dole* Tropical Gold Pineapple or 2 cups canned Dole* Pineapple Chunks, drained
- 1/3 cup prepared raspberry vinaigrette
- 3 ripe Dole* Bananas, divided
- 1 cup Dole* Green Grapes
- Combine mixed fruit, salad greens and pineapple in a large salad bowl.
- Place vinaigrette and 1 chopped banana in a blender or a food processor container and blend until smooth.
- Slice 2 bananas into 1/2-inch-thick pieces and add to the salad just before serving.
- Toss salad with dressing and garnish with grapes.
- Makes 10-12 servings.
