Fish and potato bake
Instructions:
- Preheat oven to l80 C (350 C). To make a roux. melt butter In a small saucepan. Add flour and mix to form a smooth paste
- Stir in tomato Juice, packett of tomato soup mix and sugar and cook untd the mixture thickens Add parsley and season with salt and pepper to taste.
- To make the mash potatoes, boll potatoes until soft. Mash withh a masher or in a blender. Add the onion, milk and butter and mix well
- Grease a pie dish and pour half the raux Into the dish. Lay fish fillets on top and pour the rest of the roux over the fish
- Top With mashed potato and bake for about 20 minutes.
