Fish Fritters
Instructions:
- 1 pound fish fillets
- 3 eggs, separated
- 3 tablespoons flour
- 1 teaspoon minced garlic
- 1 teaspoon minced parsley
- 1 teaspoon salt
- ¼ teaspoon pepper
- Broil or boil fish, remove bone, flake, then mash. Beat egg yolks.
- Add flour slowly to egg yolks, then garlic, parsley, salt and pepper, mixing as you add each ingredient.
- Stir in fish. Beat egg whites until frothy and blend into fish mixture. Drop from spoon into hot oil and fry to a golden brown.
- Drain fritters on paper towels.
- Serves four.
