Flaked Fish Casserole
Instructions:
- 2 cups perch, cooked, flaked (can substitute crabmeat, salmon or lobster for perch)
- ½ cup grated Cheddar cheese
- 2 eggs
- 2 cups milk
- 3 crackers, rolled into crumbs
- 2 tablespoons butter, melted
- juice of 1 lemon
- Combine fish flakes and cheese, add beaten eggs and milk, and pour into buttered casserole.
- Cover with cracker crumbs and melted butter.
- Pour lemon juice over all.
- Cover and set casserole dish in pan of warm water in oven.
- Bake at 350 degrees F for 30 minutes.
- Serves six.
