Forever-cooked broccoli
Instructions:
- Trim the broccoli crowns into large florets. Peel the stems and cut into 1⁄2-inchthick
slices. Bring a large saucepan of water to a boil. Add 1⁄2 teaspoon kosher salt per cup of water. Add the broccoli. Cook for 5 minutes and drain well.
- Warm the oil, garlic, red pepper flakes, and anchovy in a large skillet over medium heat. Stir in the broccoli and season with the salt and pepper. Cover, reduce the heat, and cook very slowly until the broccoli is very soft but not dissolved into mush, about 11⁄2 hours, stirring occasionally. Check the seasoning and serve warm or at room temperature.
- What else works? You can replace the broccoli with snap beans that have thick, sturdy pods, such as Romano beans.
