Fresh Anchovies Baked with Onions
Instructions:
- Clean the fish: Wash, remove the heads and guts, and pull away the spines. Salt and refrigerate the fish for 1 hour.
- Meanwhile, heat 1⁄3 cup of the olive oil in a large skillet over medium-low heat and cook the onions and garlic until wilted, 7 to 8 minutes.
- Preheat the oven to 350°F. Layer the onions and garlic in a large shallow baking pan, preferably made of glass. Place the rosemary sprig in the center and the fish on top. Season generously with salt, pepper, and lemon juice and drizzle with the remaining 1⁄4 cup olive oil. Bake until the fish are cooked through, about 35 minutes. Serve hot
