Fresh berry tumble
Instructions:
-
A great last-minute dessert, perfect in the summertime when fresh berries are in the markets. Select whichever berries look the best and combine them just before serving. It works well served with crunchy nut wafers or sponge or angel food cake. When fresh berries are not available, purchase individually frozen, unsugared berries.
- 3 cups of any combination of fresh blueberries, raspberries, strawberries, red currants, blackberries, or loganberries;
- 1 cup heavy cream;
- 1⁄4 cup powdered sugar;
- 1 teaspoon vanilla;
- Grated rind of 1⁄2 lemon.
- Pick over the berries and combine them in a bowl. Just before serving, whip the cream and add the sugar, vanilla, and lemon rind. Fold the whipped cream into the berries, and turn into individual dessert dishes or into a pretty glass serving bowl.
