Fresh blueberry parfaits with pistachio crumble
Instructions:
- Melt the jelly in a small saucepan over low heat. Remove the pan from the heat and gently stir in the berries. Cover and refrigerate until chilled, at least 30 minutes.
- Crush the cookies into coarse crumbs and place them in a small bowl. Stir in the pistachios and cardamom. Drizzle in the butter and toss to coat.
- Just before serving, stir together the sour cream and sugar in a small bowl.
- Spoon the berry mixture into serving dishes. Top with the cookie mixture and a generous dollop of the sour cream mixture and serve lightly chilled.
