Fresh tomato salsa
Instructions:
- 3 large tomatoes, chopped;
- 1 medium mild onion, minced;
- 2 – 3 jalapenos, seeded and minced;
- 3 tablespoons fresh cilantro, chopped;
- 1 teaspoon salt;
- Juice of 1 lime.
- CHOOSE:
- Plump, unblemished fruits with a distinct tomato smell. One medium tomato chopped equals about 1⁄2 cup.
- STORE: Tomatoes that are unripe but slightly pink should be stored in indirect light or in a paper bag to ripen. Ripe tomatoes should be stored in the refrigerator and used within a week.
- HOW TO USE: Wash well and eat raw or cooked in your favorite recipe.
- Mix all ingredients together.
- Store in refrigerator for several hours to mix flavors.
