Fried Bread
Instructions:
- Rotuma is politically a part of Fiji, but it has distinctly different traditions and language. Rotumans are Polynesians mixed with the descendants of European mutineers and missionaries. They speak a distinct Rotuman Polynesian language.
- 4 cups flour
- 1 ounce dried yeast
- 4 TBS sugar
- 1 tsp salt
- 2 TBS butter
- warm water for mixing
- oil for deep-frying
- Combine flour, yeast, sugar, salt, and butter in a food processor.
- Blend in just enough warm water to form a soft dough.
- Remove dough and knead for 10 or 15 minutes.
- Rub lightly with oil. Let stand in a lightly floured bowl, covered by damp towel, in a warm place until doubled in size, about 1 hour.
- Punch dough down, then roll out on a well-floured surface to 1â„2-inch thick.
- Cut into diamond shapes and let stand for a few minutes in a warm place. Heat oil to about 3708F.
- Deep fry dough a few pieces at a time until golden brown on both sides.
- Drain on paper towels.
- Eat warm, dipped in coconut milk or papaya jam.
