Fried Carp
Instructions:
- 3- to 3 1/2 -lb. carp fillet
- 1/2 tsp. salt
- 1/2 c. flour
- 2 eggs, beaten
- 1/2 c. bread crumbs
- , 7 tbsp. canola oil
- 1 lemon, sliced
- Wash fish and cut into 4 slices.
- Sprinkle with salt and let stand for 1 hour in the refrigerator.
- Put flour, beaten eggs, and bread crumbs into 3 separate shallow bowls or pans.
- Roll each slice of fish in flour, then eggs, then bread crumbs.
- Heat oil in frying pan. Fry slices on one side until golden brown (about 5 minutes). Then flip the slices and fry on other side until golden brown (about 5 minutes).
- Garnish with lemon slices and serve.
- Preparation time: 15 minutes
- Waiting time (for fish to marinate in salt): 1 hour
- Cooking time: 20 minutes Serves 4
