Fried Corn
Instructions:
- 6-8 large ears of sweet corn, cleaned, rinsed, and kernels removed from cob
- 1 green peppers, diced
- 1/2 cup all -purpose flour
- 1 tablespoon granulated sugar
- Salt & pepper to taste
- 1/2 cup vegetable shortening
- Combine corn kernels, green pepper, flour, sugar, salt and pepper.
- Toss to evenly coat vegetables.
- Heat the shortening until hot.
- Carefully add the corn mixture and fry until the corn is tender and starts to brown.
- Stir frequently to prevent sticking.
