Fried fish with garlic
Instructions:
- Using strong kitchen scissors, remove the fins and head from the fish.
- Peel the garlic and slice very finely, using a mandoline or sharp knife.
- Pour the oil into a small pan and add the garlic.
- Put the pan over medium heat and gently fry the garlic until golden. Be careful not to let the garlic burn.
- Drain the garlic through a fine-mesh metal strainer, reserving the oil.
- Transfer the garlic onto paper towels to absorb any excess oil.
- Let the oil cool a little, then add the sherry vinegar and stir to make a dressing.
- Season the fish with salt. Heat a large frying pan or flat griddle, add a little oil, and place the fish in it.
- Fry the fish for 1 minute, or until golden underneath. Use a spatula to turn the fish.
- Cook on the second side for 1 minute, then transfer to a serving dish.
- Scatter the fried garlic over the fish. Give the oil-and-vinegar dressing a final stir.
- Spoon a couple of tablespoons of dressing over each fish.
