Fried Green Tomatoes
Instructions:
- 4 green tomatoes
- 1 cup all-purpose flour
- ¼ cup rendered ham fat
Slice the tomatoes ¼-inch thick. Lightly dredge with flour, shaking off any excess. In a large heavy skillet, preferably cast-iron, melt the fat. Coat and fry the tomatoes until lightly golden on each side.
